I have absolutely no clue if this is possible, but if so, it could lead to some fun results....
Would it be possible to modify the FSX 737-800 default VC by removing/replacing a number of the existing gauges, and converting the VC into an old style analogue cockpit, like in the oldest 737-200s?
It seems like it could be possible if someone switches out and rearranges the main panel gauges, with a likely need to touch up the textures on the panel background. The overhead would not even need to be touched, neither would the pedestal.

Would create some interesting opportunities.

Sounds possible to me, would you just replace the gauges in the VCockpit section of the panel.cfg?
Ah, but the gauges would have to be exactly the same size to work I think.

No. Here's the reason why. The VC isn't laid out like the 2d panel is, with a background image. Instead, only selected
polygons
in the VC's panel mesh are UVW Mapped for specific gauges and gauge sizes, as shown in the image below:
