Okay, so when you are on multiplayer, and you select a session, and it doesn't say what the ATC frequency is, how do you know what it is?

Correct, the premise is based off of real people playing together, so theres no computer atc interaction

depending on what servers you play with they will usually havea website of some sort that explains all this for you, such as chicagoatc.net they explain most of the stuff to you, however im not sure if they fly with fsx yet.....

You don't always need to know.

If it is not in the game subscription which you see when you select the game, it's an overall frequency and is used by everybody. So everyone is on the same channel and everybody is automaticly tuned to this radiofrequency.

When there is a radiofrequency posted in the game's subscription (and this option is selected during game setup by the host), you have to tune to that particular frequency to be able to to contact ATC. If there's more then one ATC controller, the "default" ATC controller while give the other frequency's to tune to.

And no, TeamSpeak is "not" used if you go multiplayer via the Gamespy server provided in FSX.
