I've noticed that most of the planes I find on various sites don't have Virtual cockpits!  I do all my flying in the virtual cockpit so I was wondering if I can just copy and paste a virtual cockpit from one plane to the other?

No,you can't...

So should I just get used to flying without virtual cockpit or do I just need to look around for better models?

There are a number of planes out there with VCs - depends on the type of plane you want. I fly passenger jets mostly, and some that have VCs include the Posky 757 and the new Project SkyWorks CRJ-700. Coming soon will be a 737-700 with a comprehensive VC but it's not released yet.
