You obviously understand the basic principle of all this so there's no need for a full tutorial.
Installing the 757 should be straightforward enough. After extracting POSKY-757-200_Winglets_ver.1.1.zip to your MYPLANES folder, open the folder named POSKY-757-200_Winglets_ver.1.1. This is what it looks like.

Paste the folder named
OSX_B757-200_Winglets
into your FSX\SimObjects\Airplanes folder.
Open the folder named
Copy to EFFECTS
. Select all the files inside it & paste them into your FSX\Effects folder.
In the same way paste the contents of the
Copy to MAIN GAUGES
&
Copy to MAIN SOUND as is
folders into their respective folders in your main FSX directory. I strongly recommend you
Don't overwrite files/folders if prompted.
That's all there is to it. The 757 should be listed under Project Opensky on the FSX selection menu.
