I think there won't be problems with the FPS unless you don't have a good video-card. And with the new flight coming i think you're fine too.

I don't like the i7 I think it's not worth the price and the extra speed, l3 cache and extra memory channel does much. I like the core i5 alot more.
Otherwise: it's a good prcoessor yeah

How would FSX cope with 4 channel RAM? For example, I’ve found Redline 4 x 2gb   DDR3   PC3 12800 @ 7 8 7 24  1.5v.  (994013)

It would be really nice. Just to make sure you don't misunderstand though: core i5 is dual channel memory and core i7 is triple channel. So it's not how many memory sticks you put in but how you put them. For instance I have two slots close to another: that's one channel. Then I also have another two slots an inch away from those: that's another channel. Basically for every channel you have your processor can use the memory on those simultaneously and thus gain extra bandwidth.

Hope I helped and didn't confuse you. Once again to make sure: a core i5 with atleast 4gb of memory and a decent video card will play FSX really fine.
The computer I have in my signature plays FSX on nearly max with FEX clouds and extra draw distance as well as ultimate traffic 2.
