Are you referring to the Menu bar at the top of your FS2004 screen (when you are flying) when you press ALT ?

If you wish to return back temporarily to the Desktop, press the "Windows" key on the keyboard.
To return back to the Sim, click the "Flight Sim" on the bottom Task Bar.

if you want to keep the Menu Bar at the top ALL the time... press ALT+ENTER (which will technically put the sim in "windowed" mode)
