I always seem to be taking off and landing at the same runway when I fly from my favorite base, no matter what the weather conditions are or what time of year it is. It may change once or twice but it'll stay the same for weeks on end usually. Bit of a pain as I'd like to practise circuits for different runways.

Where I fly from has four runways so 8 different possible takeoff/landing points!

Is there a mod/hack to let it change more often?

Using as5 for my weather too..

Better yet.. choose a parking spot on the ramp, and taxi to the runway you choose (based on prevailing winds)..

If you're using real weather and the wind has always the same direction, then it's always the same runway which is marked as "active".
You'll have to modify the wind direction, so that another runway is choosed by the ATC.

Sorry I forgot to mention I start from a slot on a pan, and use atc to tell me which runway is active!

You have got no "legal" choice then...
ATC are insisting that you use the Active runway only, to comply with the Airfield rules...and no other runway...Wink...!

Tuning the Radio to ATIS (Automatic Terminal Information Service) will advise tell you which Runway to use for take-off and landing.

As the others have said, if the winds are the same, the runway is the same. Usually it is as simple as that.

What would be interesting in my opinion is if you could have the FS ATC let you depart one runway, and then use a different runway while doing pattern work if the wind is relatively light. (Have done that before in real life)
Also, in calm conditions it would be interesting at least at the smaller fields that do this to have landings occur in both directions on a runway depending on where the aircraft is coming from. (Did that too, really gets you thinking when on final knowing that another plane will be landing within a minute or two after you on the same runway in the opposite direction. Makes things quick and very convenient though!)

you CAN do this.  its called call ATC as request a different runway when you are ready to land.
