I have the GTX 280 running a projector and a 10" touchscreen for our FMC or GPS. I just purchased a 15" touchscreen that I want to use for the overhead panel.

What additional card should I add to my Asus P6T deluxe just to run the instruments? It doesn't need to be fast but I don't want to conflict with the GTX 280.

Will I get a performance hit by doing this? Also, the additional card will allow me to drag the instruments to the other monitor, right?

You can go to Nvidia and check the release notes for your drivers and see what cards are compatible with the driver.

Any compatible card should do the trick for you.
