I can't understand how thes guys can look at these while they are flipping, rolling, pulling G's and so on but, they do and they also keep an eye on a timer. It's a special breed that fly aerobatics!!

They don't exactly read it as they fly- they study and study it, then usually "walk" it on the ground, which makes them look like they're dizzy.
By the time they do the routine for real, the plan is like sheet music for a concert musician: just there for quick glimpses as needed.

Yeah, everywhere you walked you saw one of the pilots going through his or her's routine twisting and turning and using their hand like it was the plane!!
