Shouldn't this Flying Tigers P-40 have Chinese markings on the wing? I could be wrong...

You could quite possibly both be right. It's quite possible both were used at some stage.
Certainly photos exist of FT P-40s with no wing markings at all, and with stars pre-delivery. It's quite possible that the stars re-appeared upon the US' official entry into the war.
