Well I'm Currently Downloading Gmax.
So two things,

2) What airplane should i attempt first? (personall oppinion)

1st - go through ALL of the default gmax tutorials - even the P-38 tutorial.
2d - download and go through the Stupid Idiot's guide to gmax... that gives you a 'starter' project.
3rd - do play around with the program.
4th - ask SPECIFIC questions
5th - check out the tutorials at Freeflight Design Shop

May I suggest creating
a simple box (building) and adding a texture to it; (S)ave it as FS9 Flight Simulator file and edit the *.xml file to a location of your choice; drop it onto BGLComp and copy the files to the appropriate folder then start up FS9 and go and look at your masterpiece.

My advise is to do what WJI said start out simple and work from there.
There is a good tutorial on how to build a small house complete with both day and night textures. I did that and I now use the house as a line shack at my home airport KJAX.
Trust me it will save you a lot of hair.
I also went and bought a book called the GMAX BIBLE it comes with a cd and a whole lot of tutorials on how to use GMAX.
