Your wingies need the correct payload as these are associated with certain mission types.
Not all aircaft will perform all AI routines.
To come around the issue either use "recommended" payload in the mission builder or check the aircraft's xdp file which aircraft/payload supports which type of missions.
The aircraft xdp files are located in the CFS3\aircraft root in the various aircraft subfolders and can be opened with Notepad.
The payload/mission type info is half way down the file.

Pweh, havn't played with it for quite some time.
I think you can edit your saved mission file manually.

In the air formations section you should see something like this:

<Unit ID="40001" Type="fw_190a_8" Name="" IsPlayer="y" Skill="2" Payload="15"/>
           <Unit ID="40002" Type="fw_190a_8" Name="" Skill="2" Payload="15"/>
           <Unit ID="40003" Type="fw_190a_8" Name="" Skill="2" Payload="15"/>
           <Unit ID="40004" Type="fw_190a_8" Name="" Skill="2" Payload="15"/>

note the isplayer bit.
Cut and paste that bit to one of the other Type ID's in your formation and you should start somewhere else in the formation.
might look like this then:

<Unit ID="40001" Type="fw_190a_8" Name=""  Skill="2" Payload="15"/>
           <Unit ID="40002" Type="fw_190a_8" Name="" Skill="2" Payload="15"/>
           <Unit ID="40003" Type="fw_190a_8" Name="" Skill="2" Payload="15"/>
           <Unit ID="40004" Type="fw_190a_8" Name=""IsPlayer="y" Skill="2" Payload="15"/>

Can't quite recall though wether this was it, you just may want to check it out.
