I Like Flight Simulation!
Devils Tower doesn't exist in FS02 but I think you can get an addon for it.
Mt. Rushmore is one of the default flights - if you don't mind flying past it ini a C-172
For other airports and interesting flights try
http://www.fsdestinations.com/index.php
and
dangerous-airports.com (doesn't seem to be on line at the moment).

Or start a flight in Castlegar, BC, Canada (CYCG). Be sure you select clear weather and climb out of the valley before heading off to explore. (MEA's around 9000 ft IFR)

If you enjoy flying in the mountains, I suggest downloading 'terrain mesh' add-ons, if you havent already done so. These greatly improve the topography.
The Simviation 'global terrain mesh' is available from the main download page.
Or search downloads for 'Holger Sandmann'. He has many excellent freeware meshes available. In particular, his BC Mesh will make Dodgers suggested flight awsome.

I assume that you checked out the "Select a Flight " section in FS2002.
