I have built an F-4E Phantom and would like to animate both canopies.  The forward one is straight forward.  What control do I use for the rear one ?

You mean what name?  There are several you can use, but there are only two exits available.

Door_Passenger (front) and Door_Cargo (rear)
f_canopy (front) and r_canopy (rear)
vc_f_canopy and vc_r_canopy for the virtual cockpit

The Shift+E command will open the first one and Shift+E+2 will open the rear one.
