does anyone know how the startup pic is named? (the cessna in 256 colors...)

It isn't what the picture is named, but where its located that matters. There is a folder in the main FS section titled UIRES (probably for User Interface RESources). Check around in here for the picture you were talking about.

If you want to change that picture, there is a great utility around that can randomize different screenshots. Just go find the splashscreen download section on this site and you'll find it.
