I have two wheels on my Saitek X45 Throttle, and am wondering how to set them as my pitch and rudder trim. didn't see any option in the FSX controls settings, it there any way to do this?

Elevator trim axis can be set in the Control Axes tab. Don't see one for Rudder trim.
