Did you read the FAQ page? http://www.justflight.com/faqs.asp?drdProduct=145#FAQ206

There is no Virtual Cockpit being displayed

You need to turn the Virtual Cockpit on:

Open the panel icon box by clicking the hotspot shown below:

Now press the icon labelled 'VC', so it appears green. The VC should now be enabled:

I'd like to point out that I know nothing about Just Flight or any other payware products. The best place to find answers to problems is from their product support.

I found this on the 767 FAQ page. http://www.justflight.com/faqs.asp?drdProduct=225#FAQ532

I cannot get the aircraft to take off. The aircraft does not respond when I apply back-pressure to the joystick

Please set the elevator trim prior to take-off. The setting of four degrees nose up trim is common for most take-offs.

You said you purchased the boxed versions.  If they're from Just Flight, make sure you go to justflight.com and download the updates for both the DC-10 and 767.  There are a few fixes to the DC-10 as well as the INS feature.  But they're still working on fixing the cockpit windows problem when it's raining or snowing.
The 767 service pack is very important to fix uneven fuel burn.  You'll also get 5 new liveries with the service pack.

I'm a big fan of the CLS aircrafts.  If you're into heavies, the Airbus Long Haul Collection is also excellent.
