Does anyone knows about a good tutorial how to animate a pilot in Gmax for FS2004?

I don't recall one, but the concept is pretty straight-forward.  Which sim are you using?

Usually you animate their head to move with a combination of rudder, ailerons and elevators.  I make mine follow ailerons and elevators.

EDIT:

I looked at the JBizz, and it looks like you are using the FS9 SDK.  So your simplest way to do this is create a node (small box or whatever) inside the neck of the pilot where you want his head to move up and down.  Link his head to the box and name this part "Elevator_Key".  Now animate it with 0 being full down deflection (probably with his head down) and 100 full up.  Next rename the head as "R_Aileron_Key".  It animates so that 0 is a right turn and 100 is a left turn.

There!  That should take care of it!  Now export as usual and let us know if it worked.

I animate pilot's head with tick18_xxx for FS9, or Ambient_xxx for FSX

Frame 0 to frame 1024, head makes a "T scan" of the primary instruments, then makes a scan out the window looking for traffic.

Because I use 1024 frames, I can have the pilot perform up to six scans, each one slightly different so it doesn't look so 'robotic..." Smiley
