The de-ice trucks here are mostly operated by one individual from inside an enclosed station at the end of the boom.
The unit can also disperse hot air along with de-icing fluid.  The hot air clears snow/ice from the fuselage, wings etc.

There are still a few de-ice trucks around that have a crew of two, driver and de-icer but we see more one person operated units now.
The de-ice pad is also more common which operates much like a very large car wash and does not require a second truck/unit to suck up the de-ice fluid.
It is not uncommon to see both types in use at military or civilian airports here.

I remember the old days when we just parked the bird in the sun and sent the crewman out with a broom.   Grin

What happens to all the toxic de-icing fluid?

Doug, I've come across the enclosed units in Canada (Halifax I think, almost exactly Wink about a year ago as it happens). Very swish, and a bit warmer too I suspect! Smiley

Here the de-icing fluid is recycled depending on the concentration percentage.  There are different holding tanks for different used concentration levels. 

There are different types of de-icing fluids as well in use.

In Canada where there is a chance of de-icing fluid seeping/leaking into a sewer or body of water there are several meters placed in strategic locations set for different time intervals for testing per hour which will detect even the minutest level of the concentration and the first fine from the Ministry of the Environment is six digits which is costly. 
There is zero tolerance by the Ministry and I for one tend to agree with that.   Smiley
