I am currently running windows vista on a compaq C500 and with the graphics set on low to FSX runs fine. I tried to upgrade the Acceleration pack and now FSX wont load and has an error saying graphics card does not meet the minimum requirements. Is there any way to fix or bypass this issue?

the fact that you play fsx on the lower settings tell all. you reached the limit of your graphic card. acceleration is an upgrade compare to fsx regular.i'm no expert but it maybe possible to upgrade your pc,but i'm not sure with laptop.
