was pretty amazed to see this. 757 departing out of San Diego, with a seemingly very short takeoff roll. I've flown out of there many, many times and can say even in a 737 we didnt get off the ground that quick!

As mentioned in the comments it was probably pretty lightly loaded and therefore didn;t need as much runway. Steeper climb would be possible due to it being easier to obtain higher speed due to less weight. 757s are pretty manoevreable things as well....anyone who's seen the Kiwi 757 demo will testify to that

thats true. And I've been on a 757 departing SD before, just not like that! Its a steep takeoff as it is... very fun!

Cool weather, light load... might have also been a good headwind (which improves the distance-to-climb ratio).
Didn't exactly rotate "at the piano keys", either... but still, it's impressive- more like a 737 takeoff!
