Why do they make the planes land that direction there?  I have seen many pictures of planes clearing that hill and diving like crazy to make the runway.

They land in that direction because of that hill and the lenght of the runway. If you land in the opposite direction and you happen to run out of tarmac you will crash into the hill (tried it many times using FlyTampas scenery). It's to steep to take off again. Now you will get some sand and water in your engines....
