I have a matox Triple Head2Go installed.  Wouldn't be without it.

It requires FSX in Full Screen mode to give the 3840 pixel picture.  And FSX must be in VC to give an undistorted picture.

FSX can be started in VC but only in windowed mode when "Fly Now" is clicked.

This requires Alt+Enter to then go to Full Screen - and this can cause flicker and instability.

Can I adjust the FSX.cfg to force the game to open in Full Screen and VC?  And what is the adjustment required?

I'm probably out of my depth here. FSX should run in Full Screen mode by default. It should be possible to change the "Default cockpit view" to either '3D Virtual Cockpit' or '2D instrument panel' from FSX/Settings/Display/Aircraft. There should also be an option to "Show opening screen" from FSX/Settings/General. Uncheck the box to bypass the menu screen on startup. If it's set up correctly FSX should now load your default flight in Full Screen Mode with the DVC cockpit view. If I understand you correctly this is what you wanted.
