How deep do you like your sim experience?  Lock On is great.  It's about as deep as MSFS is for civil aviation.  It's got beautiful visuals and decent gameplay (the campaign aspect is weak, too scripted).

But if you want pure simulation artwork, a sim deeper than any sim you've ever experienced, try Falcon 4.0 Allied Force.  It's dated, but it's a classic.  Really it has to be experienced to be believed.  It took me half an hour to learn how to start the engine and you have as much chance getting the plane to work without reading the manual as you would in a real fighter aircraft.  No <cntrl><E> shortcuts here, only an airplane and 400 pages of text and the wild blue yonder, oh and a STEEP learning curve.  It's great.
