After searching for a long time through many forums, I have to ask here, because I couldn't find something that fit or what I found wasn't understandable for me...
I now managed landing by ILS, of course using AP. But flying from A to B is still a thing of guessing the heading and fly as long as the airport is in sight / the APP takes over the control.
My question: how do I tell the AP to follow the airways, marked on the card? Please, as simple as possible. Maybe using ATC...

You can either use your nav radios navigate follow airways to or from nav aids, or your GPS to navigate to various types of waypoints

Or get a chart (an old one's fine for a sim - try ebay) buy a protractor, and hey presto, very basic visual nav...

That sounds like the way I want it, but on what exactly do I adjust the Nav(1?) to: VOR? And what has the AP to be set on? APP too? I guess not...
And flying by GPS... Hey, I don't want to graduate in "Garmin-Science"

To get the AP to use a VOR source, then (in very generic AP terms) NAV mode (HDG mode to get to a radial, NAV to capture it). Once overhead a beacon you can the re-adjust the track bar to your next desired track outbound from the VOR. You may find it easier to "manually" fly the turn using the AP HDG mode.

Before I started working on my pilot's license, I would get to know some of the local pilot's in the area, and get their outdated charts they didn't want. I ended up with sectional charts for half the united states...
I use Aeronautical charts, real or digital to navigate with the flightsim. No GPS, and I stopped using the built in map to see where I was. You can download sectional charts for the US in JPG format, which are great for FS.
Learn how to use the navigational radios, and the charts will become even more of an invaluable tool when flying around the virtual world

Ok, it all sounded good, but I still don't get the bird to fly where I want to have it...
I adjusted the NAV1 on a near VOR frequence, VOR LOC (/Nav hold) on, AP on, FD on but it still keeps flying straight ahead...
What am I doing wrong???

Let me try to illustrate your azimuth situation. (I see now that the VOR 1 is DXB, not DKB, I assume you're flying in Dubai?)
You're flying along at HDG 101, to your 10 o clock is the VOR, 14NM from you.
Now you are asking the aircraft to track course (radial) 340, which means that the intercept radial (160 outbound) is a couple of miles ahead. So the AP wont initiate the roll until the CDI starts to move (usually no later than ½ dot from center)
Your intercept angle might be little too steep aswell, so expect an overshoot in the beginning.
On your screenshot VOR/LOC should not be in green, but in white because it is ARMED but no ACTIVE.
Did you continue the flight and maintaining that heading after your screenshot?
Also, why is your CDI not indicating a course of 340?,

I actually was flying somewhere around Stuttgart / Baden-Württemberg / Germany... But the situation stays the same!
Yes, after flying on for a few minutes, the plane made a sudden turn to the left. But isn't there a possibility to tell the AP to straight head on to the VOR?

Am I really asking to track course 340??? Where is this said (and could it be changed - seems like the solvation to my problem if I could get this radial towards my direction?!?)
edit: oh, sry, indicated by "course"? So changing course to appr. 50°, might that solve my problem?!

Yes, if you want to fly directly to the VOR, setting the COURSE windown to ~060 degrees would cause (or at least SHOULD cause
) the aircraft to bank slightly left and fly directly to the VOR
Keep an eye on the RMI, (thin needle arrow always points to the contra radial, the tail indicates which radial you are currently flying on). In your case the RMI shows you're currently on radial 240, the reciprocal radial is 060, which is the one you will want to track in order to fly directly to the VOR DXB.

There is a Google Earth plugin that lets you display chart info over the google eareth textures. I think it's USA only, but maybe there is an updated version now... It's pretty cool, but I haven't tried using them with FS yet. I can't give you the link at the moment, but a google should get you there.
