I'm sure this has been asked a billion times... here's a billion and one...
Me and my friend are flying on the server. He's flying a 757 and I wanna fly my 767. Do we need each other's EXACT model to display each other correctly or will any 3rd party of the same type work? For example say he has the Mike Stone 757 and I have the POSKY 757. Should my computer display the POSKY 757 in place of his 757?

Sometimes it will but most of the time it won't. So it is best if you both have identical models installed
There are two types of aeroplane, Spitfires and everything else that wishes it was a Spitfire!

As I understand it, the sim will display the last default model used during the session.

Strange that you say it will be the default Baron/172. For me he showed up as the Lear when we were flying last night. I just didn't have time to download the 757 he has and he doesn't know which one he has.

If both of you are not using any of the default aircraft, then pre-arrange for both of you do download, and install EXACTLY the same aircraft, and then try it out....

The system only works successfully if both of you, (and everyone else!), have EXACTLY the same aircraft, with the same textures, in your/their Hangar...
...!

When you have done the above, go into "External View" mode and check with each other that the expected aircraft are displayed...

What Sim do you use ?
If you are both using FSX with FSHost Client.. there is an option (a drop down list)
where you can assign an aircraft to be displayed for each user.
