anyone know where the autopilot controls are in the Tomcat?  I can't seem to find them, but I wanted to try some long distance flying, which might be rather difficult to fly by the seat of my pants.

Iris usually includes a short manual with most controls with their planes (They did for their Fulcrum and F-15E). Try looking in your FS9 folder for something called "Iris Manuals". If it doesn't say there... Well... I can't help  Sad

I saw the master switch but I couldn't find where to set the heading and altitude and such.
