I'm finding that several of the aircraft don't allow seat height adjustments in 2D cockpit view.  The keyboard shortcut is active.  Since other aircraft do allow it, is there a config setting that needs fixing somewhere?

You can just click and grab the image of the cockpit and move it down if it's too high.

In FSX's 2d view, the "seat height adjustment" key commands have changed to:

Shift-Q (hold for a few seconds!)
Ctrl-Q (hold for a few seconds!)

Thanks for that.

The eye height adjustments are still listed in the keyboard assignments as SHIFT+ENTER and CTRL+ENTER, but most cockpits don't respond.

Pan up/down is CTRL+Q and CTRL+SHIFT+Q, which does seem to be rather more widely available as a workaround.  CTRL+SPACE still returns to normal datum, which is helpful.
