I have found a table that enables one to calculate approach speeds for the 737 by using the weight of the aircraft (the table shows the weight in kg's)

Is there any way I can see the weight of the aircraft in kg just prior to landing (so fuel weight will be correct).  I dont believe that the flight info (shift+z) gives it, or am I mistaken.

The only way I can think of is calculate it yourself.

My aircraft.cfg says the empty weight of a 737 is 100,792 lbs, or 45,718 Kg.  Add the weight of the fuel and that is the weight of the aircraft.

If there is no gauge that will tell you the weight of the fuel hit Alt/Aircraft/Fuel.

You can calculate the weight yourself.

All you need to know is the total gross weight on the ramp and fuel consumed (you'll need to know your ramp fuel to get FC).

RGW - FC = Landing weight

Rather simple, no?  I recommend you use pounds for this
