I'm new to Flight Sim's, and am finding it almost impossible to land in CFS3. By the time I get a decent view of the landing strip, I'm finding I can't get lined up, drop height, drop speed, etc. in time to keep the plane under control. Any hints?

Y'all might want to look at stepping up your graphics with the WM scenery pack that Mathias mentioned & the recommended settings.
As a quick fix try boosting your sliders up if they are still at default settings.
Edit thing: if you cant see the runway till close no matter what then do a standard military landing, not a straight in airliner approach Fly the upwind leg with the runway on your left to get low & slow....count two seconds after you reach the perch then do a stand rate turn to the left...on the downwind leg get the flaps/gear out....as you pass the threshold make a standard rate turn to the left.....you are now on final...final adjustment & land.
Plane with long noses Spitfires/F4U's always flew a curving turn onto final let them see the runway/deck quite easy.
Y'all will never see combat film of an F4 doing anything but a curving turn to line up for a trap. They learned that from the Royal Navy who adopted the F4 for carrier use way before the USN.

You'll see the runway better if you use the HUD for this part of the flight.

As in most things in life yu gotta walk before you can run. In real life no instructor would teach you how to handle a "hot ship" until after your basic training in a slower, more stable plane.
Might be good to practice basics on one of those.
