I need to disable all AI traffic to troubleshoot the bog in takeoff and landing rolls in big airports.  How do I do this?

Go into settings, traffic, and move the slider to the left.

another way is to go to the scenery folder then the world folder than the scenery folder toward the bottom of the files you should find any trafic file. You can than move these files out of FS and into a dummy folder. Or you can change the type from bgl to txt either way this will ellimanate all AI traffic. Make sure you change or move any file that has the word traffic anywhere in its name. 8)
