Yes, with CFS2 you can fly anywhere in the world. Now, you won't have airfields or cities to view, but you can go anywhere.
The great thing is, is that tons of scenery has been created for CFS2 that you can virtually cover the whole world and then fly anywhere and have a place to land.
Just start downloading scenery, learn how to install it (not that complicated of a process) and fly to your hearts content.
Here is a neat place to check out: N60* 31.13' E6* 58.44' Just punch in those coordinates in free flight, it is the Fjords of Norway. I fly a lot of combat there on the Zone.

Yes you can fly missions in Europe if the mission was designed for that area. Some of the more complicated missions require you download acft., scenery and more. But there are some good Euro missions out there so I hear.
CFS1, to tell you the truth, I never flew it very much. But my money would be on that it is the same as CFS2. You should be able to fly the world but you would have to download scenery in order to have airfields to go to and land. Someone like Hagar would know more about CFS1 than I, he's outlasted the dinosaurs!!
