for the dogfight missions you might be able to tinker with the spawn files to fix that.   i'm pretty sure every thing else is just bad code and can't be fixed.


Edit: The wingman thing happens when they're shooting at a target that's in front of you and you end up in the path of their bullets.  You mainly just need to keep track of where they are when you're shooting at a bandit and you have  wingman near you.
