I have not dropped any torpedoes in CFS3 but have dropped a bunch in CFS2 while flying Blackcat raids at nioght in a PBY-5A Catalina. Here is how I do it there.

Fly low, slow and level, about 65 feet 100knots. Lead your target based on it's speed and heading, and your speed and point of release, this is mostly trial and error learning to aim a torpedo. I release my torpedo around 800feet from the target, give teh torpeodo tiem to get up to speed, with out giving your target too much time to react. (Note, CFS3 ships are stupid and do not react like CFS2 ships which will attempt to get away) Once the torpedo is released open the thrttle wide and pull up so you do not collide with your target, Oncew your speed is up high enough it is a good idea to jink around to spoil the AA gunners aim.

You can expect to be shot down a few times, but this is how it was done.

The main thing is leading the ship enough to hit it.  in real life, you have to come in real low and slow, but it seems in CFS3, the tin fish run the same no matter how you drop them.  I have hit ships before by releasing torpedoes from 6000 ft.  in a 50 degree dive.lol
