FS2 campaigns are getting boring because I can rarely take off from a carrier.  The problem is - I succeed ten or twenty percent of the time, so I can't be doing something terribly wrong.  I set the flaps, start the engine, put on the brakes, push the throttle to 100%, then release the brakes.  Usually I'm over 80 mph at the end of the runway, but usually I descend into the drink.   Can anyone help?

Just like real life, you're not going to get anywhere near enough speed to take off without catapult support.

Here http://www.simviation.com/fs2004panels4.htm is a panel with meatball/catapult support (the F/A 18 at the bottom of the page) or look for rcbco-11.zip, which contains the gauge and some installation instructions.  There are other panels with the same gauge built in just search the library for "meatball".

PS - You are probably going to need to do little panel editing.  I don't know of any 2002 panels with this gauge in it.
