Does anyone know if there is a way to add stations of weight for aircraft made before FS2004?  There are a lot of great looking airplanes out there made for 2002 or 2000, but they only have one station for weight.

I think you can yes.

Have you tried copying a weights section over from a FS9 aircraft?

In FS2002 I don't think the station loads will be editable in the game, but you can edit them via the cfg. In FS9 you can obviously edit the staition weights as normal.

You should not have any problem adding weights to old aircraft the trick is knowing where to put the weight.
I think you have to define where exactly the weight is to be placed in the craft, and if you do not get it right it can cause some adverse effects like the plane standing on its tail and unfortuneately you wont know of this untill you start FS with that plane selected. I know that with most planes you can use the change payload option of FS but I am not sure if you must first define a place for this weight to go in the aircraft cfg file. I have not really looked.
