I don't think that's possible, as it would require adding in another set of textures for everything, essentially doubling the size of the texture files for anything and everything.  You would have to have a nightvision set for each aircraft, and then a nightvision set for every bit of scenery out there.  I suppose you could transpose the regular night images for the green nightvision ones whenever you wanted to fly with them, but you would have to retexture so much stuff it probably wouldn't be worth it.
