I just got this game a few weeks ago and I'm wondering where the ships are. Are they in certain locations or near certain airfields? The guides and all always talk about them but I can't find any.

Hi imccully, the ships are all located in The Channel.
The easiest way to find them is try a shipping attack in quick combat

Unless your CFS3 is different than mine OZZY72, there is no antishipping missions in Quick Combat. You must fly a campaign and click antishipping mission to see some. If you add the ships from Ground Crew's web site (they come with auto installers and are easy to add) they will show up in the antishipping missions of the campaign and are much better ships.

There's never been an antiship option in quick combat in any CFS ozzy...
