You would need a full install of FS98 to your HD to use the default scenery in CFS. If you don't wish to use FS98 the default areas you wish to use in CFS, like the Oceania & Asia folders, can be copied to another location. I suggest pasting them in with your 3rd party scenery (the Addon folder in my tute) & activating from there before uninstalling FS98. It's been a while & I'm not sure if it would be possible to copy these folders direct from the FS98 CD. If so, this would save time.
The other problem might not be caused by your joystick. Providing it's calibrated correctly it's more likely the aircraft. I use an old M$ Sidewinder Pro myself & find that many 3rd party aircraft are not set up correctly. I always suspected this was caused by the authors not having a decent joystick. As you probably know, trim is also affected by airspeed & things like flaps. One trim setting would not be used throughout the flight envelope. I dislike the push buttons myself & prefer a joystick with rotary trim controls. I miss my old Saitek X-36 terribly.
