This is the big secret of course. Play what they want - not what you want.
I played drums for a rock/dance group right through the 60s & early 70s. On average we were working 4 nights per week & could have worked 7 if we wanted. We were turning work away while other excellent groups were lucky to get 1 gig per month or less. The only difference was that we could & would play almost anything from traditional dance music to our favouite rock & roll & the latest hits. You can never please all the people all of the time but you have have a darned good shot at pleasing most of them.
Another thing is to get out there & play live. It's all very well making recordings & hoping someone will like them enough to give you a contract but there's no better experience than playing in front of an audience. Some will be better than others & in some cases you will wish the earth would open up & swallow you up. Others will make up for it & you won't want to come off the stage. This is the only way to get experience. IMHO
