Firstly, does anyone know if there are specificaly UN painted aircraft?  And secondly would anyone be interested in UN aircraft such as Hercules and other transports. Possibley helo's.

Yes there have been "specific" UN aircraft.

I remember seeing illustrations of "UN" Saab jet fighters, basic aluminium with blue "UN" lettering in place of the Swedish insignia.

Typically, air units attached to UN "peacekeepers" are in the normal owner-country's colors, with the "UN" in white (in the case of "combat" helicopters).

Humanitarian aid helicopters and aircraft are usually white, with blue "UN".

I do not believe that there is a particular specification, so there is a large variation.

one of the An-26 packages (largest one) has UN colors
 

Russian planes: IL-76 (all standard length ones),  Tu-154 and Il-62, Tu-134 and An-24RV&&&&AI flightplans and repaints can be found here

I'm not even going to make a satirical comment about the color in which I think the UN planes should be painted, because I know it would just start trouble.
