There is a carrier available just off the coast of San Fransisco.
There are add-on carriers available here in the scenery downloads section, there are several sites carrying oil-rig add-ons too.

There are two types of aeroplane, Spitfires and everything else that wishes it was a Spitfire!

And another one off of San Diego, Ca.
Take off from Lindhburg Field, and fly towards the ocean, and turn left at the coastline. You'll see the ship off to your right after a minute, or so.
I don't think I've ever seen an oil rig in the default scenery.

I know there is one oil rig in the middle of the Gulf Of Mexico, looks like they were just trying to test stuff out down there. I'll hop the Blackbird and try and find it later, it could be anywhere down there, I was VFRing around in the SR-71 at the time.
(Mach 2ish at low altitude is funnnnnn!)
Oh by the way, there is another carrier somewhere in either Hawaii or Midway, I'll see if I can find out if no one else knows.

I always forget about that one.
It's at or near Pearl Harbor. And, I think there's another North of the Islands, somewhere, too.

Honolulu Hawaii, take off from Honolulu Intl, turn hard left, and land on it.
