Flight following is simply provided to VFR aircraft for traffic conflict purposes only.  Their (ATC) main job is to keep IFR traffic separated, and while not in FS yet, ATC will cancel your flight following under two conditions... their work (IFR) load becomes to heavy or if you request a cancellation.  They may even deny you flight following if their work load is to heavy (Also not if M$F$).

And still to add BE58 and Parker among others are correct. The flight following is a privalege offered buy towers and FSS vor VFR flights based soley on controller availability.  Wich here in FS is not the case.  The thing in the sim that do hold true are of course being handed off to different centers and controllers.  But this again is dependant on the centers workload.  Don't know if the game highlights that But you could fly the same route VFR and fly then  IFR and in the real world you would almost definately be handed off to different flight centers. IFR taking priority.  I figure this would either help relate or just  re state what others say. but every little bit helps.

srry if i made it more confusing in the example if you flew from say KDCA to Washington DC to O'Hare in Chicago,  on the VFR flight you would generally be handed from washinton center to clevelend to Ohare approach. The same rout you might IFR you may Be handed from washington to Indionapoilis to Ohare appraoch or vise versa.
