Use your autopilot to maintain height. Set 10000 in altitude box and click alt, then click ap. FL190 means 19000 feet, FL230=23000 feet etc. Suggest you go to training flights in game for experience.

You also need to trim the plane once you get to cruising altitude. Make sure the Number Lock is off and use keys 7 to trim the nose down and 1 to trim it up. Don't chase your Vertical Speed needle. Make a small adjustments and wait for the plane to stabilize and if it still wants to go up or down make another until it is flying level.
If you have Force Feedback this is really easy since you can feel the forces come off the stick and it will center when you have the right trim. Without FF then you'll have to keep watching the vertical speed indicator.

I didn't think yu could run autopilot for hieght only in 2002. Every plane I flew with auto pilot forced me to have wing leveler on so I can't turn. The only way I could turn with auto on is to use the heading controls. Then it will turn off the W/L switch.

You can run Altitude only using the autopilot.
The problem lies in the fact that the FS2002 automatically engages wing leveller when you turn it on.
To avoid this happening, add the following lines to the aircraft.cfg:
use_no_default_pitch = 1 // 0 = Default to current pitch mode, 1 = No default pitch mode.
use_no_default_bank = 1 // 0 = Default to Wing Leveler mode, 1 = No default bank mode.
